I’ve seen it mentioned that freezing and thawing tofu before cooking it gives it a meatier texture. I wonder if that could make it better? Don’t know if it changes the flavour tho.

The “ULTIMATE trick” is to freeze the Tofu overnight because it will be a chewier, more satisfying texture.
When Tofu freezes, it changes its structure. The water inside forms ice crystals that create tiny holes.
When thawed and pressed, much of the water is released, leaving a spongy texture that absorbs marinades better and has a “meaty” chew.
