@enjoyemeri: hand-picked tencha leaves are hard to come by these days. while most matcha is now harvested by machine for speed and scale, hand-picking is essential for rare and delicate cultivars like Asahi and Uji Hikari. as these cultivars are known for having some of the softest leaves, they can be easily damaged, and mechanical picking would compromise both their quality and flavor. by harvesting by hand, farmers can select only the highest-quality, most tender leaves—while keeping the rest of the plant healthy and undisturbed. here’s a sneak peek at the third farm we’ve visited so far on our farm tours across Japan. we were amazed by the pickers’ precision, efficiency, and experience. it was truly something special! 📍uji, kyoto #enjoyemeri #uji #ujimatcha #matcha #firstharvest #japanesetea
