I’m a butcher . I can confirm that your local sourced beef is just older. That’s why it’s darker. Or not kept at 30°. When not kept that right temperature beef starts to darken. It will smell fine, but it will just darken. Both meats are fine.

The one from the store has been packed in nitrogen to keep it from oxidizing after having been ground. Both are fine, the local farm one has just been processed differently is all.
