Oat Pita Kebab Pocket (No Flour). Recipe ↓ The flavor was interesting, but I think the basic oat pita (just blended oats with water) works better overall. It’s easier to make, and the pita comes out lighter, so it’s easier to cut open and fill. Once you add yogurt and oil, you have to cook it longer and more carefully to keep it from being wet inside and to help it puff up properly. To get the right consistency for cooking, you’ll need to adjust it with either a bit more water or some oat flour. ■ INGREDIENTS Pocket: • rolled oats - 3 cups (255 g) • water - 1 cup (240 ml) • olive oil - 1 tbsp • Greek yogurt - 2 tbsp • salt - 1/2 tsp • garlic powder - 1/2 tsp • onion powder - 1/2 tsp • smoked paprika - 1/2 tsp • dried oregano - 1/2 tsp • black pepper - to taste • blended oats (oat flour) - to thin out the mixture if needed Filling: • kebab-style meat (beef or chicken) • green salad mix • tomato, sliced • feta cheese • red onion, thinly sliced You can make it any style you like: breakfast (eggs + bacon), chicken & veggies, Philly-style beef, turkey & avocado, etc. Ranch sauce: • mayonnaise - 2 tbsp • Greek yogurt - 2 tbsp • fresh dill - 1 tbsp, chopped • lemon juice - 1-2 tsp • garlic powder - pinch • salt - to taste • black pepper - to taste ■ HOW TO MAKE: 1. Add oats, water, olive oil, yogurt, salt, and all spices to a blender. Blend until completely smooth. 2. Let the batter sit for 10-15 minutes to thicken. If it gets too thick, add a splash of water and mix. 3. Heat a non-stick pan over medium heat. No extra oil needed. 4. Pour a thin layer of batter onto the pan and spread slightly to form a flatbread. 5. Lower the heat and cook for about 1-2 minutes until set, then flip and cook another 1-2 minutes. Keep it soft and flexible (don’t overcook). 6. Mix all ranch sauce ingredients in a bowl until smooth. Adjust lemon and seasoning to taste. 7. Fill the flatbread with warm kebab meat, salad, tomato, feta, and red onion.  8. Drizzle with ranch sauce. 9.
