@cookwithhali: Swiss Roll Cake with Cream Cheese Filling & Chocolate Peanut Glaze Ingredients For the Cake: • 4 eggs • 120g sugar (½ cup + 1 tbsp) • 104g all-purpose flour (¾ cup) • 16g cocoa powder (2 tbsp) For the Cream Filling: • 200ml heavy whipping cream (¾ cup + 1 tbsp) • 2 tbsp powdered sugar • 100g cream cheese (about ½ cup) For the Glaze & Topping: • 100g melted chocolate (about ⅔ cup chopped chocolate) • Chopped peanuts (as much as you like) Instructions 1. Preheat your oven to 180°C (356°F). 2. In a bowl, beat the eggs and sugar on high speed for 7–8 minutes until pale and fluffy. 3. Sift in flour and cocoa powder, and gently fold until combined. 4. Pour the batter into a lined baking tray (around 36×25 cm). 5. Bake at 180°C for 12 minutes, or until it springs back when touched. 6. While it’s still hot, flip the cake onto a clean paper towel or kitchen towel and gently roll it up. 7. Let it cool for 1 hour rolled up. 8. Meanwhile, make the cream: • Whip the heavy cream with powdered sugar and cream cheese until soft peaks. 9. Unroll the cake, spread the cream, and roll it back up. 10. Top with melted chocolate and chopped peanuts. 11. Let it chill before slicing.
