My viral greek inspired plate, perfect for summer☀️❤️ Recipe👇: Chicken Meatballs with lemon orzo and grilled zucchini Serves 4 Ingredients Chicken Meatballs 	•	450g / 1 lb ground chicken 	•	4 tbsp cottage cheese 	•	1 red onion, shredded 	•	1 sweet red pepper, shredded 	•	3 tbsp fresh parsley, finely chopped 	•	1 tsp salt 	•	1 tsp paprika 	•	1 tsp oregano spice 	•	1 tsp bifteki spice 	•	0,5 tsp chili flakes  	•	Freshly ground black pepper, to taste 	•	oil or butter for frying Lemon Orzo 	•	300g / 1½ cups orzo 	•	1 small red onion, finely chopped 	•	Juice and zest of half a lemon 	•	500–600ml / 2–2½ cups chicken broth 	•	A handful / 2–3 tbsp fresh dill, chopped 	•	1 tbsp butter 	•	Extra virgin olive oil  	•	Salt and pepper to taste Grilled Zucchini 	•	2 medium zucchinis, sliced thinly lengthwise 	•	Salt and pepper Instructions 	1.	Chicken Meatballs: In a bowl, combine ground chicken, cottage cheese, shredded onion, shredded snack paprika, parsley, salt, paprika, bifteki spice, black pepper, and any extra spices. Mix until evenly combined. Shape into meatballs. Fry in a bit of oil or butter over medium heat until browned and cooked through. 	2.	Lemon Orzo: Heat a bit of extra virgin olive oil in a pan and sauté the red onion until soft. Add orzo and butter, and toast for 1–2 minutes. Stir in lemon juice and lemon zest. Gradually add chicken broth, stirring regularly. Cover the pan with a lid and let it steam until the orzo is tender and the liquid is absorbed. Add dill and pepper. Finish with 1 tbsp butter stirred in at the end for richness. 	3.	Grilled Zucchini: Toss zucchini slices with olive oil, salt, and pepper. Grill over high heat (grill pan or skillet) for about 2 minutes per side until tender and charred. 	4.	To Serve: Plate lemon orzo, top with meatballs, and serve grilled zucchini on the side.
