@littleremyfood: Which DRAGON FRUIT POPPING BOBA is better, red or white? ✨Recipe: Ingredients: • 2 cups red dragonfruit flesh (yields ~1 cup juice) • ¼ tbsp sodium alginate • 2 tbsp calcium lactate • 4 cups warm water Directions: 1. Scoop the flesh from the dragonfruit and blend until smooth. Strain through a fine mesh sieve to get about 1 cup of juice. Discard the pulp. 2. In a blender, combine the dragonfruit juice and sodium alginate. Blend until completely dissolved and smooth. Let sit for 10–15 minutes to reduce bubbles. 3. In a separate large bowl, stir the calcium lactate into the warm water until fully dissolved. 4. Using a dropper or squeeze bottle, gently drop the dragonfruit mixture into the calcium bath. You’ll see little pearls form instantly! For perfectly round boba, drop the liquid into a rounded spoon first, then lower and swirl it gently into the bath. 5. Let the pearls sit in the bath for 1–2 minutes, stirring gently so they don’t clump. Scoop them out with a fine-mesh strainer and rinse under cold water twice to remove any excess calcium. 6. Enjoy immediately, or store your boba in lightly sweetened water in the fridge for up to 24 hours. 😊
