Water renders the fat out and then as water evaporates, the meat fries in its own fat until crisp. Too much water and it’s boiled meatballs

So as a chef. This method is not bad. It draws out the grease from the ball and it keeps it moisture intact. It always works for a burger. Strange but it’s true

What??? I have never heard of that before! My Italian Grandparents fried in olive oil then in a pot of sauce! Was my after-school snack back when. lol

My Grandma and Aunt made the best meatballs and they would bake it in the oven with water and then transfer to sauce and leave some w.o. sauce. My family was from Campania & San Fele. They also put meatballs in soup 😍

100% I do this exact method at my pizzaria. They used to just bake them untill I came and I was like WTF where’s the water?! I showed them the, owner came in, asked him to try it he ate 3 and changed the how they cook them to my way. I also learnt from a Nona. 🤣

he's likely saying Braising , which is a 2 part method , first sear then to cover halfway in liquid lid on slow temp in water
