Sourdough (No Tools, No Dutch Oven) Ingredients • 140g starter (½ cup + 1 tbsp) • 327g bread flour (2⅔ cups) • 70g whole wheat flour (½ cup) • 243g water (1 cup) • 1 tsp salt ⸻ Instructions 1. In a bowl, mix water, starter, and flour until combined. Cover and rest for 1 hour. 2. Add salt, then do stretch and fold followed by coil folds. Keep folding until the dough becomes smooth and slightly sticky. Cover and rest 30 minutes, then do one more coil fold. Cover and let it rise about 3 hours (longer if cold) until it grows about 70% (don’t wait until it doubles). 3. Lightly flour your surface, transfer the dough, and gently stretch without flattening too much. Fold the sides in, roll it tight, then turn and repeat. Keep turning the dough between your hands (up and down) to create strong tension and a tight surface. 4. Place on floured parchment paper, cover with a bowl, and rest for 1 hour. 5. Flour the top, score, then bake in a fully preheated oven (at least 35 min) with a hot tray inside. Slide the dough in, add boiling water to a second tray for steam, and close quickly.
