EASY & DELICIOUS CINNAMON CHIP NO KNEAD ARTISAN BREAD!! INGREDIENTS:  * 3 cups unbleached  AP flour * 1 3/4 teaspoons kosher salt * 3/4 teaspoon instant yeast (I use Saf) * 1 1/2 cups water * 1/2-3/4 cup mini cinnamon baking chips (bits) DIRECTIONS: >Make dough the night before. Or early morning of the day you plan on cooking bread. Measure dry ingredients into large mixing bowl. Lightly toss together with a fork. Add water & mix with fork, spatula, or danish dough hook until a shaggy mixture appears. Dough will be sticky, & shaggy. Place dough in buttered bowl, or butter existing bowl.  Cover bowl with lid or plastic wrap. In 30 minutes, wet fingers, and do 4 stretch and folds of the dough. Replace lid. In 30 mins do 4 more stretch and folds. Set aside for 8-18 hours.   > When ready to cook, preheat oven to 450° with Dutch oven inside.  > While the oven, and Dutch oven, are preheating, lightly flour work surface, and drop dough out of bowl onto the surface. Pull edges & lightly stretch. Sprinkle with cinnamon chips. Carefully stretch and pull edges to the center. Repeat, making a ball. Flip the ball over and place on a piece of parchment paper. Don’t do too much work here, you don’t want to deflate the wonderful bubbles in the dough! Gently tuck under edges and shape into a ball. If you don’t have parchment paper I also have placed dough directly in Dutch oven when cooking). Sprinkle a pinch of flour over the top of dough and cover lightly with a piece of saran wrap. Dough will raise for about 30-40 minutes while Dutch oven is preheating in the oven. Score dough.  > Remove hot pot from oven and place the parchment paper with the dough in the Dutch oven (or just the dough if you are not using parchment paper). Put lid on top and bake for 25 minutes. Open oven and remove lid and bake for another 7-10 minutes until top is a beautiful golden, crusty brown color.  > Remove from oven and place dough on cooling rack. Let cool for a while, but I like to eat it warm.  Serve with honey butter!
