Preheat oven to 350°F. Grease or line a 9x5-inch loaf pan with parchment paper. 2. Beat softened butter, brown sugar, and white sugar until light and fluffy. 3. Add eggs and vanilla. Mix well, then stir in mashed bananas. 4. Blend oats into a fine powder. Add flour and oat flour to the batter. 5. Sprinkle in baking soda, baking powder, salt, and optional spices. Mix just until combined. 6. Fold in sour cream and optional chopped nuts and or chocolate chips 7. Pour into prepared loaf pan and smooth the top. 8. Bake for 55–65 minutes, or until a toothpick inserted deep into the center comes out without wet batter. 9.
