In a large oven-safe skillet, melt the butter over medium heat. Add the chicken and cook until just browned on both sides - donโ€™t worry if the center is still raw, the chicken will finishing cooking off in the oven. Remove the chicken from the skillet and set aside. In the same skillet, add the bell peppers, leeks and garlic. Sautรฉ for about 2 minutes, then add in the artichoke and spinach. Sprinkle the flour over the vegetables and stir to coat them evenly. Then slowly pour in the broth while stirring continuously, allowing the mixture to thicken. Stir in the heavy cream and the remaining dried herbs and seasonings and stir to combine. Simmer for 4-5 minutes until the sauce thickens. Return the cooked chicken to the skillet, along with itโ€™s juices, pop the skillet into the oven to bake for 12-15 minutes, or until the chicken has fully cooked through.
