the Amish I know don't use pressure canners. they water bath everything! probably not the safest but it's what they do

I have pressure canned potatoes, both cubed and shredded. I definitely would never add Italian seasoning to them again, but have used other seasoning and sooooo good.

I’m canning chili as I write this. The pressure cooker is heating. Salt is important to me in canning. I add a little lemon juice as well, keeps potatoes white.
