@bakedat50: Help Me With Scoring My niche is usually inclusions. I really don’t put much thought into my scoring. But lately I have been wanting to try and do a little more decorative designs on my plain loaves. My questions: Why won’t my loaves stay white? I’m spraying with water and using rice flour. Why does my lame drag/snag the dough? Is it my dough or do I need a better one? Please share what lame you use if it’s a good one! These are beautiful!! So fun you’re trying new scores😍 I always put my dough in the freezer for 15 minutes before scoring so I can take my time and not worry about it losing structure🫶🏼

The rice flour never worked for me either. I use regular flour the same one I use for the bread and also the steam sometimes also make the flour not to stay white. They are perfect dear.

Dip your blade in flour or spray with Pam before scoring and the blade my need changing. Your bread looks amazing baked lady.

I think you’re doing great👍 what I do is scroll TikTok or the Internet find The ones I like and then I just try to copy what they do sometimes it works and sometimes it doesn’t I think practice makes perfect

You’re doing great! If you cold proof and use a DO, you don’t need to spritz or add ice cubes. I’m sure someone has already said this in the previous comments. Keep up the good work.

I use a nice thick coating of AP cause it stays on the bread a bit better than rice I’ve found, and a nice deep 45 degree angle score (twice) before baking and don’t worry about the snag unless your blade is full!👏

I always cold proof my loaves overnight and pop in the freezer for 30 minutes before scoring/baking. Rice flour is what makes it super white and good for contrast as AP flour doesn’t as much. And don’t use ice cubes because that messes up the flour/contrast

Use an xacto knife!! I tried that and it totally changed my scoring for the better. Also keep blade very clean. Maybe skip the water and sprinkle more rice flour. Also, I score my wheat in the opposite direction. Insert the blade kind of deep right where your stalk is. then lift out for a shallower cut as you get to the tip of the leaf. Hope this helps!

Cold proof…. Spritz with water, sprinkle rice flour, spritz again, sprinkle again…. I loveeee my @Fiskars Americas exacto knife. And don’t use any ice in your Dutch oven bc it’ll take the white away

So if you have ice or steam in the Dutch oven the rice flour basically cooks and disappears. I lather that loaf in flour and no steam. It’s dragging because you need a new blade probably. I change my blade often like every two loaves. Also I freeze my loaf for 20-30 min before I score it. It firms up the crust to help with dragging. Also I will do the fine detail less deep you’re scoring them deep which is why it busts right there. Try the deep score 5-6 minutes after baking for expansion it’ll keep the detail more intact it’ll want to bust where you cut it deepest 💖💖💖 just helpful tips, I think your scoring looks great!

I wouldn’t spray the loaf with water, it absorbs the rice flour. Same if you add ice to the Dutch oven. The moisture it creates will absorb the flour.
