✨ W - Waterzooi ✨  Waterzooi (which literally translates to ‘watery mess’) is a Belgian stew from Ghent, usually made with fish. It’s a creamy broth with leeks, carrots and celery (which I left out because yuck) which I’ve paired with salmon, prawns and mussels. This was absolutely outstanding, and was so chuffed to use my @nurturedinnorfolk wild garlic herb oil 🌿  Ingredients 🐟 240 g salmon fillet, diced 🐟 250 g mussels 🐟 150 g prawns 🐟 500 ml chicken stock 🐟 200 ml dry white wine 🐟 2 leeks, thin strips 🐟 2 carrots, thin strips 🐟 1 small onion, sliced 🐟 Handful of parsley, half chopped for broth, half for garnish 🐟 200 ml double cream 🐟 2 egg yolks 🐟 Juice of 1 lemon 🐟 Salt and pepper to taste  🐟 2 tbsp butter 🐟 Crusty bread or boiled potatoes to serve Method 1. In a large pot, add the white wine, onion, half the parsley, and a knob of butter. 2. Bring to a boil, add the mussels, cover, and steam for 4 minutes until they open. 3. Remove mussels with a slotted spoon (discard any that don’t open). 4. Strain and reserve the cooking liquid. 5. In another pot, melt butter and gently fry leeks, carrots until softened but not browned. 6. Add chicken stock and the strained mussel liquid. Simmer gently for 10 minutes. 7. Add salmon pieces to the simmering broth. Cook for about 5 minutes, until just done. 8. Return the mussels to heat through and add cooked prawns. 9. In a bowl, whisk the egg yolks with the cream and lemon juice. 10. Take the pot off the heat. Slowly stir in the cream mixture, whisking constantly (do not boil, or it will curdle). 11. Season with salt and white pepper to taste. 12. Ladle the fish, shellfish, and vegetables into a bowl.  13. Pour over the creamy broth. 14. Sprinkle with chopped parsley. 15.
