French Onion Meatloaf with Gruyère Prep Time: 20 minutes Cook Time: 1 hour 10 minutes Servings: 6–8 Ingredients For the Meatloaf 2 lbs ground beef (80/20) 1 cup breadcrumbs 2 large eggs 1 medium onion, finely diced 3 cloves garlic, minced 1 tbsp Worcestershire sauce 1 tbsp Dijon mustard 1 tsp onion powder 1 tsp garlic powder 1 tsp dried thyme 1 tsp salt ½ tsp black pepper 2 tbsp chopped fresh parsley For the French Onion Filling 2 tbsp butter 2 large yellow onions, thinly sliced 1 tsp sugar ½ tsp salt ½ cup beef broth 1 tbsp Worcestershire sauce 8 oz Gruyère cheese, sliced or shredded Glaze ½ cup ketchup 2 tbsp brown sugar 1 tbsp Worcestershire sauce 1 tsp Dijon mustard Instructions 1. Caramelize the onions: Melt butter in a skillet over medium-low heat. Add the sliced onions, sugar, and salt. Cook for 25–30 minutes, stirring often, until deep golden brown. Stir in the beef broth and Worcestershire sauce. Cook until the liquid has mostly evaporated. Let cool slightly. 2. Preheat the oven to 350°F (175°C). Line a baking sheet or lightly grease a loaf pan. 3. Make the meat mixture: In a large bowl, combine the ground beef, breadcrumbs, eggs, diced onion, garlic, Worcestershire sauce, Dijon mustard, onion powder, garlic powder, thyme, salt, pepper, and parsley. Mix gently until just combined. 4. Assemble: Press half of the meat mixture into a loaf shape. Create a shallow well in the center and fill with the caramelized onions and Gruyère cheese. Cover with the remaining meat mixture and seal the edges well. 5. Prepare the glaze: Mix together the ketchup, brown sugar, Worcestershire sauce, and Dijon mustard. Spread evenly over the top of the meatloaf. 6. Bake for 55–65 minutes, or until the internal temperature reaches 160°F (71°C). 7. Remove from the oven and top with a little extra Gruyère cheese. Broil for 2–3 minutes until the cheese is melted and lightly golden. 8. Let the meatloaf rest for 10 minutes before slicing. Garnish with fresh parsley or thyme and serve with mashed potatoes or roasted vegetables. Tips Swiss cheese can be substituted for Gruyère if needed. For even more flavor, add ½ cup sautéed mushrooms to the onion filling. Leftovers make amazing sandwiches the next day! #FrenchOnionMeatloaf #MeatloafRecipe #ComfortFood #DinnerIdeas #FamilyDinner
