@basicsundaycooking: Spicy Bacon Enoki Mushroom recipe ⬇️ 4-strips of bacon (save ~1 tbsp of bacon oil) 2 packs of enoki mushrooms 1 tbsp gochujang (Korean red pepper paste) 1/2 - 1 tbsp gochugaru (Korean red pepper flakes) 2 tsp soy sauce 1-2 tsp minced garlic 3 tbsp water 1-2 tsp sugar 1. Cook the bacon strips in a pan until crispy. 2. Remove and set aside. Dab off any excess oil w/ paper towels. 3. Save ~1 tbsp of bacon fat—just enough to sear the mushrooms. 4. Trim the base off each bunch of enoki mushrooms. 5. Gently rinse and pat them dry with paper towels. 6. Cut the bottom half-way, then tear the rest into smaller clusters by hand. 7. In the same pan, sear the mushrooms in the reserved bacon fat. 8. Cook each side for 2–3 mins on medium heat, until lightly golden. Flip and repeat. 9. Lower the heat to medium-low, and pour in your sauce. 10. Use the back of a spoon to brush the sauce evenly over the mushrooms. 11. If the sauce is too thick, add water 1 tablespoon at a time 12. Let the sauce simmer and thicken for 2–3 minutes. 13. Finish by topping with chopped bacon. Serve over rice. #koreanfood #enokimushroom #bacon #mushrooms #blackpink
