It also depends on how much time you wanna invest in quality and controls ingredients. I know you talk about this all the time, but it is a difference between a higher end restaurant and more casual dining.

If youre using store bought Mayo and store bought Bacon Bits, why not just but Canned roasted reds, and then use real bacon, made in the Oven?

you can tell a lot of these commenters have never worked in a busy kitchen. every time saving measure can be a lifesaver, especially with a large menu. at the end of the day most customers won't notice that the bacon wasn't cooked in the restaurant, especially when it's one component of a sauce.
