Before the arrival of the Spanish, the Incas paraded their mummies through the plaza. Today, 15 saints and virgins parade through the historic center with dances, music, and thousands of faithful accompanying them. ✅ The images stay for a week in the Cathedral and then return to their parishes in the famous Octave of Corpus Christi. ✅ And of course… there is no Corpus without chiriuchu, that dish that mixes chicken, guinea pig, sausages, torrejas, toasted corn, and more.
