A light but filling salad that’s perfect for meal prep, lunch, or dinner. 🥗💪🏼 📌 Recipe Mediterranean High Protein Salad 🥗   📝🥗 Ingredients Salad Base:  🔹1 large head romaine lettuce, chopped  🔹1½ cups cherry tomatoes  🔹1 cup cucumber, diced  🔹1 red onion, thinly sliced  🔹handful olives, pitted and halved  🔹1 can chickpeas (15 oz / 400 g), drained & rinsed  🔹4 oz (115 g) feta cheese, crumbled  🔹4 boiled eggs  Dressing:  🔹60 ml (¼ cup) extra virgin olive oil  🔹45 ml (3 tbsp) lemon juice  🔹1 tsp lemon zest  🔹1 tsp dried oregano  🔹2 tsp Dijon mustard  🔹2 tsp honey  🔹1 tsp salt + black pepper to taste   How to make it:  Boil the eggs: Cook 4 eggs for 8 minutes, cool under cold water, peel & cut.  Dressing: Whisk together olive oil, lemon juice, zest, oregano, Dijon, honey, salt & pepper.  Marinate chickpeas: Toss chickpeas in the dressing and let sit while prepping veggies.  Assemble: Add romaine, tomatoes, cucumber, onion, olives, feta, marinated chickpeas & eggs.
