Don’t do Roman shades on those windows - work with two pages and do really long floor to ceiling sheers and keep them stacked on the sides until you want privacy! It’ll let the light in but won’t hardly block the windows at all

As far as the counters go, you can buy extra large glass cutting boards in spots where you prep food often and use wood cutting boards for chopping

I’m a designer and my favorite color is accessible beige by sherwin Williams it’s a neutral color and goes with anything you can do it at 75% to lighten the color- love the whole house and that you’re keeping the tile in the kitchen. Congratulations
