🍣 Spicy Salmon Sushi Rice Cups A fun, bite-sized sushi-inspired appetizer that’s crispy on the outside, tender inside, and packed with spicy salmon flavor. Perfect for parties, meal prep, or a quick sushi craving! Ingredients (makes about 12 mini cups) Rice Cups • 2 cups cooked sushi rice • Cooking spray or a little oil Spicy Salmon Filling • 8 oz fresh salmon, cut into small cubes • 2 tbsp sriracha mayo • 2 tbsp green onions, finely sliced Toppings • Black and/or white sesame seeds • Unagi sauce, for drizzling • Soy sauce, for dipping (optional) Instructions Preheat oven to 350°F. Lightly grease a mini muffin pan with cooking spray or oil. Divide the cooked sushi rice evenly between the cups. Use the back of a spoon or a small measuring spoon to firmly press the rice into the bottom and up the sides, creating little rice cups. Bake for 12–15 minutes, until the rice cups are set and hold their shape while staying soft and tender (not overly crispy). While the rice cups bake, combine the diced salmon, sriracha mayo, and green onions in a bowl. Mix gently until well coated. Carefully remove the rice cups from the pan and let them cool for a few minutes. Fill each rice cup with the spicy salmon mixture. Drizzle with unagi sauce and sprinkle with sesame seeds.
