So plastic cutting boards are bad because of microplastics, glass cutting boards can put glass shards into food and are too harsh on knives to realistically work in a commercial kitchen, bamboo has the same issues with the knife’s, and wood is too difficult to properly sanitize after you cut meat and fish on it. So there isn’t a single good option?
