The hams, the chops, the shoulders, the parts you could salt down and keep. What stayed behind was the liver, the heart, and the trimmings. The parts a man with money would have pushed to the edge of his plate. So the women went to work. They ground it fine, cooked it down, and folded in rice to make it stretch across every mouth at the table. Then they seasoned it hard with onion, green onion, parsley and cayenne, and stuffed it by hand into the casing. Nothing on that hog was wasted, and nothing about it tasted like leftovers. Every family had its own way of doing it. More liver or less. More pepper or less. A recipe carried in somebody's hands, never on paper, passed from mother to daughter across the same scarred table. Those families did not set out to make a delicacy. They set out to feed everybody. But they made it so well that it outlived the need for it. In 2012 the Louisiana Legislature named Scott, a small town just west of Lafayette, the Boudin Capital of the World. Today people drive two hours to stand in line for it at a gas station counter, and they walk out with a link still steaming in white paper. Poverty food, perfected by people who had no choice, became the taste of an entire state. Somebody in your family knew the measurements once. ⚜️
