Toasted pitta bread stuffed with crispy cornflake chicken, pan fried golden halloumi, salad and a garlicky yoghurt sauce. Easy, high protein and perfect for a summer dinner 🫶🏼 ‼️Get 50% off my new cookbook ‘20 Minute Low-Cal Kitchen Bangers’ when you pre-order on Waterstones using the code ‘LowCal25’ at checkout 🎉🎉 link is in my bio 🫶🏼 (available until the end of August) Ingredients (serves 2): 1 tsp garlic granules 1 tsp dried oregano 1 tsp smoked paprika Salt Pepper 60g fat free thick greek yoghurt 1 tbsp lemon juice 1-2 tbsp semi-skimmed milk 2 x 125g chicken breasts flattened 35g cornflakes crushed 1 tbsp plain flour 40g reduced fat halloumi sliced 2 pitta breads (I used Tesco) 2 handfuls of shredded lettuce A few spoonfuls of pickled red onion 2 slices of tomato 40g diced cucumber Garlic yoghurt sauce: (can use garlic mayo or peri) 60g fat free greek yoghurt ½ tsp chopped garlic Pinch of salt 1 tbsp lemon juice 💕Mix the seasonings together. 💕Use 2 tsp to season the chicken breasts all over. 💕Add the yoghurt, lemon juice and milk to a bowl. Mix well, before adding in the chicken. Leave to marinate for 30 minutes. 💕Toss together the remaining seasoning, crushed cornflakes and plain flour. Dip the chicken into the crushed cornflakes mix, pushing into adhere. Air fry at 190 degrees celsius for 16 minutes turning part way through. 💕Meanwhile, make the garlic yoghurt sauce with the ingredients listed, and set to one side. 💕Pan fry the halloumi for a couple of minutes each side until golden. 💕Toast the pitta breads according to packet instructions. 💕 Fill the pitta with the lettuce, tomato, cucumber, some pickled onions, the chicken, garlic sauce, halloumi and more pickled onions. notes:
- I tried a different method of coating my chicken this time and it was delish! You can also just use egg in replacement of the yog, lemon juice and milk
- You need a largish size pitta bread these ones were new in Tesco and I think 190 cals. You can slice your chicken to stuff inside more
- For pickled onions, I slice an onion pop it in a jar with around 80-100ml distilled vinegar and fill it up with another 2/3 warm water with a pinch of salt. The longer you can keep them in the fridge the better but they also taste nice after half hour.
- I love a garlicky yog for this but you can use mayo, peri mayo is also nice with this combo or even some chilli jam too
- Oven cook at 200 degrees Celsius for 20-22 mins turn part way through
