@itsaflavorfullife: How many of these five facts did you know!?   There continues to be misinformation spread about eggs so I’m teaming up with @Incredible Egg to get the facts straight.   As a dietitian who has always considered eggs a valuable, healthy addition to my diet I’m stoked that they now officially meet the FDA’s new healthy definition!   What questions do you have about egg nutrition? I’d love to answer!   Here’s how to make it a simple, amazing egg salad: 5 hard boiled eggs, peeled and GRATED, trust me this gives the best texture! 1 stalk celery, finely chopped 2 tablespoons red onion, finely chopped 1 dill pickle, finely chopped 1 tablespoon chives, minced 1-2 tablespoons hot and sweet jalapeños, minced 1/3 cup blended cottage cheese (yay extra protein boost!) 1 teaspoon Dijon mustard ½ teaspoon each garlic powder, onion powder, dried dill, smoked paprika, kosher salt pinch of black pepper   Combine all ingredients, mixing until well combined. Serve on toast, with crackers or on leafy greens!
