I do a LOT of social media scrolling as part of my recipe research process and this week I came across a cheeseburger bowl meal prep recipe from @Jalalsamfit that really caught my eye.  It had all the usual suspects in a burger bowl but he made a burger topping side salad that looked DOPE. Using this as inspiration, I tweaked/simplified a bunch of things like the sauce, the burger seasoning, but most importantly I turned the side salad into a burger-topping slaw (since his recommended iceburg lettuce base turned into liquid goo by day 3) and I have to begrudgingly say I’m now a burger bowl Stan. 1.75 lbs sweet potatoes, peeled & diced (800g)
1 tbsp olive oil (15ml)
1 tsp diamond crystal kosher salt (3g)
1/2 bunch parsley, minced (or sub dried parsley)
2 lbs lean ground beef (900g)
2 second spray cooking oil (2g)
2 tsp diamond crystal kosher salt (6g)
1 tsp granulated garlic (3g)
1 tsp granulated onion (3g)
1 tsp smoked paprika (2g)
1/2 small head green cabbage, sliced as thinly as possible
1/2 sweet white onion, sliced as thinly as possible
24 oz tricolor cherry tomatoes, diced (680g)
1 quart container of pickles, drained & diced with liquid set aside (1 950ml container)
1 tbsp sesame seeds (optional)
1/2 cup 0% fat Greek yogurt (100g)
2 tbsp light mayo (26g)
1 tbsp yellow mustard (14g)
1 tbsp ketchup, plus additional to taste/color (13g)
1 tbsp pickle brine (15g)
