Ingredients: ¾ cup unsalted butter, melted 1 cup brown sugar, packed 1 large egg 1 egg yolk 1 tsp vanilla extract ⅓ cup Biscoff spread/cookie butter 1⅔ cups all-purpose flour ½ tsp baking powder ½ tsp salt ½ cup chopped Biscoff cookies Optional: ½ cup white chocolate chips 2-3 tbsp Biscoff spread/cookie butter (for swirling) Extra cookie pieces for topping Instructions: Preheat oven to 350°F and line an 8x8 pan with parchment. Whisk melted butter and brown sugar until glossy. Whisk in egg, egg yolk, and vanilla until smooth and thickened. Mix in ⅓ cup Biscoff spread until combined. In a separate bowl, whisk flour, baking powder, and salt. Fold dry ingredients into wet until just combined. Don’t over mix. Stir in chopped cookies and/or whatever mix ins you want. Spread batter evenly in the pan. Swirl some Biscoff cookie butter on top and add cookie pieces. Bake at 350°F for 22–26 minutes or until edges are golden and a toothpick comes out with a few moist crumbs.
