⬇️RECIPE BELOW & ON OUR WEBSITE! Sườn kho dứa 🇻🇳 If you’re a fan of sweet & savory dishes, this one is for you! INGREDIENTS (4 servings) - 1.25 kg ribs - 1 pineapple (about 500g after peeling & coring) - 15g shallot - 10g garlic - 3 tbsp fish sauce - 2 tsp bouillon - 1 tsp ground black pepper - 4 tbsp nước hàng/nước màu (Vietnamese braising caramel sauce) or sugar- see step 10. - 250ml water - Salt - 2 tbsp vegetable oil DIRECTIONS 1. Add ribs to a pot and add enough room-temperature water to cover them, along with a generous sprinkle of salt. 2. Bring to boil and let parboil for about 3 minutes, then strain and rinse the ribs well. 3. Add the ribs to a bowl, along with fish sauce, bouillon, and ground black pepper. 4. Mix well to coat all the ribs and let marinate for at least 30 minutes. 5. Peel, remove eyes, cut into quarters, and core the pineapple. 6. Cut pineapple into bite-sized pieces. 7. Add 1/4 of the pineapple to a blender or food processor, and blend until smooth. 8. Thinly slice shallot and mince garlic. 9. Optional: Pour the blended pineapple through a metal strainer to remove any fibrous bits. 10. If you do not already have the nước hàng/nước màu, you will need 2.5 parts sugar to 1 part water, and a splash of lime juice. Melt sugar in a pan without stirring. Keep cooking until you get a deep brown color, then turn off the heat. Gradually pour in your warm water, stirring continuously. Add in strained lime juice, then store in a sanitized glass jar in your pantry. 11. Heat a large pan on medium and add oil. 12. Add in the shallot and garlic, and sweat them until fragrant. 13. Add in the ribs and sauté for 2-3 minutes. 14. Pour in the blended pineapple and stir to coat the ribs. 15. Add in the water and nước hàng/nước màu, and stir well. 16. Bring to boil on medium high, then reduce heat to medium low and cook for 20 minutes, covered- stirring occasionally. 17.
