Definitely use what you feel comfortable with,Type M for me is a bit overkill especially for residential, I’m in the busy over 35 years and used type M mortar only twice, once was inside a power plant and the other time at the Trade Center Tower 4 where we used it for laying block as well as grout.

I think it’s our area. Leave the Tri state area and everyone is using type S. It’s interesting. But if you calculate, type s is just m with a bit less Portland.

The more you mix it you lose strength and type s is a high industrial strength morter surposed to the best cause it has little Portland in it
