Place the meat in a roasting pan with vegetables and herbs. Roast at 180°C until tender and golden brown, brushing with its own juices during cooking. Rest the meat before slicing. Finish with fresh herbs and olive oil. Serve with roasted vegetables, homemade sauce and rustic countryside sides.
