It’s a Chinese classic that I grew up eating 4️⃣ Silken tofu ice cream – only sweetened silken tofu for a silky smooth, churned ice cream 5️⃣ Matcha taho – café worthy with silken tofu, brown sugar syrup and matcha 6️⃣ Scrambled ‘eggs’ – infused eggy soy milk curdled into scramble 7️⃣ Tofu with coriander-chili – flavoured from the inside out 8️⃣ Okara burgers – made from the pulp, packed with fresh herbs and spices 9️⃣ Okara cookies – chocolate chip, with fibers and minerals ✨ From bean to milk, to tofu, to pulp — nothing goes to waste. Soy is so underrated. It really is too bad that animal agriculture industries in the west demonized soy so much with misinformation to keep soy from cutting into their profits.

you can also just soak, cook, and blend the soy beans with a bit of water without straining them into soya milk + okara first. I made a soya bean cream sauce by doing that! I added vinegar, spring onion, nutritional yeast, onion powder, pepper, salt, oil, the soya bean cooking liquid (kind of like aquafaba), and Italian herbs and it tasted great (for a sour cream, slightly cheesy flavour profile). I'm sure there are loads of other recipes that can be made without making it into soya milk first (the same way we can use other types of beans for various recipes)—would love a part 3!
