Stainless isn't the answer. High end wood cutting boards are what you want. They're typically made from several blocks that're connected with food safe adhesive. They're made with woods that don't easily absorb water. You're right about the typical bamboo boards though. Those are also likely finished with chemicals you wouldn't want in your food. If you've invested in a good lifetime set of knives you should also be investing in a nice set of lifetime cutting boards. A good deal for a good cutting board would be roughly $150 for a 12" board. Don't use your good knives against a surface like stainless. Once the edge is gone sharpening won't bring it back.
