Mahmoos gutaifi (محموص قطيفي) This is a dangerous one. It will be on repeat.🇸🇦 Ingredients: ( 5 to 6 people ) - 5 onions ( mix of red and white) - 4 tbsps oil - 2 chickens  - 2 cups of @canarybasmati  - 3 heads of garlic - lime Aromatics:  - 3 bay leaves - 4 cardamom pods - 4 cloves - 2 sticks of cinnamon - 4 small lumis ( optional ) - chili for presentation Seasonings: - 1 tsp black pepper - 1 tsp paprika - 1 tsp cinnamon powder - 1 tsp cardamom powder  - 1 tsp garlic powder  - 1 tsp coriander powder  - 1/2 lumi powder ( optional ) - 1/2 turmeric - salt to taste - start by chopping the onion very finely then add it to a pot with the oil and fry it on high for about 10 to 15 minutes while continuously stirring.  - Once the onion starts to take a brown color, drop the heat to the lowest possible and keep stirring till it starts turning into a dark brown color it’s not burnt. It’s the sugar and the onion, turning into caramel.. - Add the chicken to the pot. Give it a quick stir then add all the aromatic’s and the spices. Add 5 cups of water get the pot to boil cover and let the chicken cook on medium heat for about 30 minutes. - place the chicken on a baking tray, then boil it in the oven for a nice crispy finish. - Wash and soak 2 cups of @canarybasmati then add it to the pot and adjust the salt. Make sure that the stock level is about a finger tip above the rice. If not, add a bit more water. Place a couple of chilies on top if you want a bit of a kick in the dish. - let it boil for about 10 minutes or till you see that the water level has gone down significantly. Then cover drop the heat to the lowest possible and let it cook for 20 minutes. Keep the lid shut for another 20 minutes while the heat is off.  - Flip the pot on a serving plate top it with the garlic heads and the chicken serve it with the slices of lime and the tahini sauce, and enjoy. #food #cooking #rice #arabicfood #ksa #saudiarabia #chicken
