thats my favorite brand of curry. I dice the veggies much smaller & typically add in baby corn or bok choy or even snow peas. and i find find stew beef to he an easy protein to add

I would suggest using a softer material for cutting, like a timber cutting board, will be way kinder on you knives and they'll stay sharper for longer.

If you wash the veggies before peeling then you can use the peelings for chips/crunchies whatever or make a veggie pancake out of it, if you don't have a composter ofc.
