Recipe (for 14cm round) 70 grams of butter 100 grams dark chocolate about 60% 2 eggs 80 grams sugar 25 grams of plain flour Pinch of salt Optional - splash of liquor or vanilla extract Melt the butter and chocolate. Separate the eggs, and add 40 grams of sugar to the whites and 40 grams to the yolks with salt. Whisk the yolks till pale, ribbon stage. Sift in the flour and mix to combine. Add the melted chocolate/butter and mix to combine. Whisk the egg whites till stiff peaks, then fold into other mixture in 3 additions. Do not overmix. Put in mold, and bake in a preheated oven at 180C/350F for about 35minutes, time depends on oven. Ganache 200 grams of chocolate 200 grams of cream Pinch of salt 1 tbsp of butter Chop chocolate. Bring cream to simmer, do not let it boil. Add to chocolate, after 5 minutes, whisk to combine. Cover with plastic and leave to cool. Assemble cake with ganache and place in fridge just to set, you do not want cake to be too cold, so you can remove once set. For chocolate decor, melt 250 grams of chocolate. Place baking tray in oven at 50C. Pour chocolate onto tray and smooth out in a thin layer. Place in fridge for about 10 minutes. Remove from fridge and let chocolate come back to room temp. Place tray against something like a wall, so you can scrape the chocolate. Test to see if chocolate will roll without breaking, then using a scraper, roll fast while other hand holds up one side. Place around cake. Then do the same till all sides are covered. Then do the same for the top, but shape the chocolate into a fan. Bon appetit!
