as a great grandmom and a great potato salad maker I always boiled my russet potatoes skin on the day before. Let them sit in the fridge before constructing ur potato salad. Makes a big difference.

Everyone makes it different. Southerners use eggs, relish, onions, mustard and seasoning of choice. I cook my potatoes with skin on that way it has more of the potato flavor. When you peel first it looses some of the potato flavor. I like trying other recipes though, looks delicious 😋
