I made this today. the hot water did not cook the fruit, surprisingly. It did solidify after refrigeration for 7 hours. it was pretty, but did not taste good.

Seems like the boiling water would cook to the fruit to mush. Dissolve the gelatin in the water, let it cool, pour over the fruit, refrigerate.

Tip: do not add kiwi. It’s got an enzyme that will prevent the gelatin from setting

I would not add the heated hello into watermelon and fruit til COOLED OFF you don’t want to cook your fruit.
