This 2-ingredient chocolate mousse cake is gluten-free, vegan, and nut-free, and the perfect easy holiday dessert. It’s rich and fudgy, and so delicious! Ingredients: •1 extra large sweet potato (or 2 smaller sweet potatoes) •9oz dark chocolate (I used Enjoy Life Foods Dark Chocolate Morsels) Instructions: 1. Prep the sweet potato: Wash, peel, and chop into cubes (you should end up with about 3 heaping cups). 2. Cook: Add the sweet potato cubes to a pot, cover with water, and bring to a boil. Once boiling, reduce to a simmer, cover, and cook for about 20 minutes, or until soft and tender. 3. Drain and cool: Strain the cooked sweet potato and let it cool slightly. 4. Melt the chocolate: Melt 9 ounces dark chocolate using your preferred method (microwave or double boiler). 5. Blend: Add the sweet potato and melted chocolate to a high-speed blender (a food processor or immersion blender should also work). Blend until completely smooth. If needed, add a bit of dairy-free milk to help it blend. 6. Set: Transfer the mixture to a loaf pan lined with parchment paper. Optional - sprinkle the top with additional chopped dark chocolate and/or flaky sea salt. 7. Chill: Refrigerate for 6+ hours, or until the cake is firm and set. 8. Serve: Remove from the pan, slice into squares, and enjoy! 9.
