This is one of our fav ways to upgrade plain white rice for better blood sugar and longer-lasting energy 🍚 Condensed recipe below — full recipe with all the details on my Substack! 💌 Ingredients: - 1 cup white rice - 1/3 cup sprouted lentils (pre-rinsed) - 1/3 cup beans — half black beans, half pinto beans (soaked min. 2 hrs, 6-8 hrs ideal) - 2 cups water Instructions (detailed recipe breakdown on my Substack💛): - Rinse rice with cold water until mostly clear. Drain. - Add sprouted lentils + soaked beans to rice. Gently mix. - Add 2 cups water. Let it sit for 5 mins. - Cook in rice cooker on white rice setting OR on stovetop (bring to boil → cover → low simmer for 16-18 min → let rest at least 10 min) - Before serving, give it a gentle mix. If you let it cool overnight and cook it a 2nd time it turns into resistant starch which is much healthier for gut bacteria and glucose spiking.

Quick question, is there a difference between sprouted lentils and regular lentils. I have seen several articles about letting your lentils sprout for three days and using them to cook with, or are the ones in the recipe just regular and soaked?
