@ketorecipes: 🍈HAND MELON SALAD This might be the most unexpected melon salad sandwich you’ll ever make. 
Think fruit salad meets prosciutto sandwich with a few italian flavors and vibes added in. If you’re looking for healthy summer recipes, fun summer snacks, or a fun twist on the classic prosciutto e melone appetizer, this one’s for you. It’s sweet, salty, creamy, peppery, and refreshing. Here is how I made it: 1.Slice a ripe cantaloupe into rounds and trim the ends. You can use the rest of the cantaloupe in a fruit salad or make smaller bites. We’ll use the ends for this hand salad / sandwich. 2.Layer with lemon basil (or regular basil with a touch of lemon zest), a few slices of prosciutto, and a half a burrata cheese ball or a spoonful (or two) of stracciatella. 3.Drizzle with extra virgin olive oil, crack some pepper, add a small handful of arugula, and drizzle on balsamic glaze over the top. Serve it open-faced or top with another melon slice to make a full sandwich. This is one of my favorite recent feel-good summer bites. It’s got the very best in each bite and there’s no cooking.
