Ingredients Cassava cake batter: 2 cups (480 ml) grated cassava 1/4 cup (50 g) sugar 150 ml condensed milk 200 ml coconut cream 1 cup young coconut strings 1 egg 1 tsp vanilla extract 3 tbsp (45 ml) melted butter Coconut caramel topping: 300 ml coconut milk 1/2 cup packed brown sugar Pinch of salt 1 tsp vanilla extract 1 tbsp (8 g) cornstarch mixed with 2 tbsp (30 ml) water (slurry) Instructions 1. Make the caramel topping: In a saucepan over medium heat, combine 300 ml coconut milk and 1/2 cup brown sugar. Stir until the sugar dissolves and the mixture thickens. Add 1 tsp vanilla, a pinch of salt, and the cornstarch slurry (1 tbsp cornstarch + 2 tbsp water). Cook for 3 minutes, then remove from heat. 2. Preheat the oven: Set it to 350°F (180°C). Grease a muffin tin. 3. Mix the cassava batter: In a large bowl, combine the grated cassava, 1/4 cup sugar, condensed milk, coconut cream, egg, vanilla, and melted butter. Mix until smooth. Gently fold in the coconut. 4. Bake the cakes: Divide the batter evenly among the prepared muffin cups. Bake for 25 minutes, or until the tops are set. 5. Add the topping: Remove the cakes from the oven. Spoon about 1 tablespoon of the coconut-caramel topping onto each cake and spread it evenly. 6. Finish under the broiler: Return the tin to the oven and bake an additional 5 minutes.
