With Ganache don’t use frozen cake more especially this winter, yita tiya fast and sometime crack Loko ri melt so you just need a normal cold cake…. Whipping ganache add bubbles to ganache so after whipping mix with a spatula to reduce bubbles. You can also heat your crapper for final coat, just dip your metal scraper on hot/boiling water

1 room temp sponges especially in winter cos now ur fighting the cold temp and cold cake, choc will set fast
2 u need to pick up your pace
3 keep hot water close by so u can dip your scraper in it or get a blow torch

Use the piping bag method by piping the cream around then scrap. It reduces the left over cream and scrap from the bottom up not top down to make it smooth

Your scrapper is too short and you stop a lot which makes the bumps get a longer scrapper and they not to stop too much in between otherwise you doing a get job practice makes perfect

The struggle is real. I find that using the ganache in a bit more runny consistency then it's easier. Here is a tip. Find a place that teaches ganache classes. Sacrifice your profit for the next cake and take that money and go for lessons there. You can use the same cake you made and covered at the class and give to the client. Win win situation.
