I am from Louisiana and petit fours are the norm, even in local grocery stores. I can completely understand how others who have never been exposed to them wouldn't know how they taste or how to make them as they are a Louisiana thing. These are close to petit fours, but not exactly. These are cake squares with a poured chocolate icing. My aunt was a professional baker and I used to watch her make them. Petit fours are only one layer and do not contain filling. They are always almond based. After you have your layer that's cut into 1"x1", you make a simple syrup that's almond based. You pour the syrup on top of the cake and let it soak in. After you do this, you pour the boiled frosting over over the separated squares. The frosting has no chocolate in it as the boiled icing hardens. You do add almond extract to it so it has that almond taste. What makes the petit four special is that they are super moist. It's not the same type of moist that a cake in the freezer has. You will put them in the fridge between steps, but no freezer. When you eat them, you can see light marks of the syrup at bottom of liner. If you want to see what petit fours should look like, check out Gambino's Bakery out of Baton Rouge/ New Orleans. These traditionally are served at showers as they have the Nola wedding cake taste.

I've known of Petit fours all my life, there are recipes in almost every old cookbook my momma had from back in the 30s,40s,and50s...my mom and my aunts made them for bridal and baby showers....🤷🏻♀️there's all kinds of recipes online, I looked one up about 3 yrs ago after remembering reading a southern living magazine about 15 years ago and then actually found the page I tore out of the magazine ! I also found the same article online but didn't need it...they were pretty light green and pink with edible flowers...just thought I'd share my experience with them ...i think we even made them in gurl scouts and home economics back in 70s-80s....🤷🏻♀️
