INGREDIENTS • 1 onion • 1 knob of ginger • 4.5 lbs Oxtail • Pho spice mix (Asian grocery store) • 2 Pieces of Rock Sugar • 3 tbsp Fish sauce • 3 tbsp Mushroom seasoning • Fresh rice noodles or dry is ok too • Bean sprouts, green onion, cilantro, Thai basil • Jalapeño Slices • Lime slices • Hoisin sauce • Sriracha (optional) ─ Directions: THE BROTH 1. Halve onion + slice ginger, lay on a sheet pan and char under the broiler 2. Parboil oxtail for 5 min, then strain & rinse (add meat, then water and bring to a boil all together) 3. Toast pho spices in a pan over medium heat until fragrant. Keep stirring or they’ll burn 4. Add meat, charred aromatics, and spices (in a spice sachet mine came with the seasoning packet) to pressure cooker 5. Add rock sugar and fill to max line with water 6. Lock lid and pressure cook on HIGH for 1 hour 7. Release pressure, remove spice bag, onion & ginger 8. Run broth through strainer to get it clear (mine isn’t because I added my meat back in lol but don’t be like me if you care) 9. Taste and add 3 tbsps of fish sauce and 3 tbsps of mushroom seasoning ─ THE BOWL 1. Flash cook fresh rice noodles in boiling water 2. Add bean sprouts, green onion, cilantro, jalapeño slices,Thai basil, and oxtail to your bowl 3. Ladle hot broth over everything 4. Top with a squeeze of lime, hoisin sauce, and Sriracha 🌶 and enjoy!
