@audreybakes: Raspberry lemon loaf 🍋❤️☀️ This loaf was made for summer! (Makes one 9x5 loaf pan) Loaf: 1½ cups all purpose flour 2 tsp baking powder ½ tsp salt 1 tsp cornstarch 1 cup granulated sugar Zest of one lemon ½ cup vegetable oil 2 eggs, room temp ½ cup full fat Greek yogurt or sour cream, room temp 2 tbsp fresh lemon juice 1 tsp vanilla extract 1 cup raspberries tossed in 1-2 tsp flour Glaze: 1 cup powdered sugar 1 tbsp lemon juice (adjust amounts for desired consistency) Instructions: Rub lemon zest into sugar. Whisk in oil, eggs, yogurt/sour cream, lemon juice, and vanilla. In a separate bowl, whisk dry ingredients. Fold the dry ingredients gently into the wet ingredients, it's ok if the batter has some lumps. Toss the fresh raspberries in some flour then gently fold into the batter. Don’t over mix. Pour into greased and lined 9x5 loaf pan. Bake at 350°F for 45-55 min. Cool completely before adding the glaze.
