We use a contract that states the full amount and the payment schedule. We require 50% deposit to book and full payment 10 days before our catering events, zero exceptions. If they don’t pay they have to figure out what they are going to do for a caterer. Recently had a bride cancel an $800 cheque for the gratuity and isn’t responding to emails so I’m calling the police to report her for fraud tomorrow. 6 months is a long time for for the bride to get organized for one order. Your order policy is top notch. You handled it well. I would add to the contract, after X amount of days/ months if no contact is made and no deposit, the order will be automatically cancelled.

the only change I would have made is to email stating that you were canceling the order as you cannot hold the date without payment. I k ow you sent to invoice cancellation but I would probably have spelled it out for her too.
