🍪 Welcome to my new series, Crowd-Pleasing Cookie Bars! For my fellow busy dessert lovers who are, or know someone, dairy-free, vegan, or gluten-free, this series is for us! I made my first batch of cookie bars over 20 years ago (for my track team in high school...) and I've been hooked ever since. Why cookie bars, you ask? So many reasons! Here are my top three: 1. Crowd-pleasing: I make cookie bars for all types of gatherings. It all started so I could cut enough bars for everyone to have one. Then it evolved into work gatherings, parties, baby showers, my cottage bakery, weddings (including my own), housewarming gifts, and more. The occasions are endless. 2. Versatility of flavors: Whatever you or the people around you are craving, it can be made into a dessert bar. From classics like Oatmeal Chocolate Chip and Snickerdoodle to just about anything you can imagine, like Teddy S'mores, Peanut Butter and Oreo, Red Velvet, Pumpkin, Apple Butter, Fluffernutter, Chai, Lactation, Lemon Poppyseed, and more. They're kind of like a blank sheet-pan-sized canvas. 3. One pan: Mix up the dough, spread it into a baking pan, pop it in the oven, and go on with your day! Don't get me wrong, I love cookies, and sheet pan cookies are an even easier way to skip the scooping and minimize dishes. 💚 All of the recipes in this series will be dairy-free by default, with swaps to make them vegan and gluten-free too, in a way no one would guess. So you can make one dessert, one batch of bars, for everyone. I hope to help you create a collection of go-to dessert recipes you'll be excited to make and even more excited to share.
