Aren’t they just a little bit soft from cooking that long? Zucchini is notorious for being mushy. Never heard it called crunchy looks good though

I've been making these in an air fryer for a few years. We love them, but notice she's careful to say the parmesan is crispy. In reality, barely. Just know that zucchini simply doesn't get crispy, but they are tasty.
