🥘 Ingredients:
1 large lamb shank
1 tbsp olive oil
1 cup beef or lamb stock
4 tbsp brown sugar
1/2 cup anise syrup
6–8 fresh figs (halved)
1 tbsp balsamic vinegar
1 small onion (finely chopped)
2 garlic cloves (minced)
1 tsp cinnamon
1/2 tsp ground cloves
Salt & pepper to taste
Fresh thyme (for garnish)
🔥 Cooking Instructions:
Sear the Shank:
Season lamb shank with salt and pepper. In a hot pan, sear all sides in olive oil until golden brown. Set aside.
Sauté Base:
In the same pan, sauté onion and garlic until soft. Add brown sugar, anise syrup, balsamic vinegar, cinnamon, and cloves. Cook until it forms a thick glaze.
Slow Cook:
Transfer everything into a slow cooker or deep oven dish. Add the lamb shank and stock. Cover tightly and cook on low heat for 3.5 to 4 hours (or 160°C/320°F in the oven).
Add Figs:
In the final 30 minutes, add halved figs to the sauce and allow them to soften and absorb flavour.
Glaze & Serve:
Once done, place on a white bowl or board. Spoon the sauce over the lamb and garnish with thyme.
